Quinoa Salad Recipe


Here is quinoa salad recipe that is one of the best salad that Everyone loves. This healthy quinoa salad made with quinoa, chickpeas, cucumber and some other healthy ingredients.


 INGREDIENTS:

- 1/2 cup quinoa, rinsed in a fine-mesh colander
- A cup of water
- 1/4 Cups of chickpeas, rinsed and drained,
- 1/2 medium size cucumber, seeded and chopped
- 1/2 medium red bell pepper, chopped
- 1/4 cup fine chopped red onion
- 1/4 cup parsley
- 1 tbsp extra virgin olive oils
- 1 lemon;s juice
- 1 tbsp of vinegar
- 1 cloves garlic, pressed or minced
- ground black pepper and salt according to your taste

INSTRUCTIONS: Put the water and quinoa in a saucepan. Boil the mixture over medium-high heat, Cook until the quinoa has absorbed all of water of pan. After 10 to 15 minutes, Remove from heat, cover it, and let the quinoa rest for 5-6 minutes.
In a big bowl, combine the cucumber, chickpeas, onion, bell pepper and parsley. Put aside.
In a small size bowl Whisk the olive oil, vinegar, lemon juice, , garlic and salt. Whisk until blended, then put aside.
Once the quinoa is almost cool, add it to your serving bowl, and drizzle the dressing on top. Toss it until the mixture is thoroughly combined. Season with salt and black pepper to taste.
